Cruciferous Garlic Crunch with Glass Noodles and Almond Slices

Cruciferous Glass Noodle Crunch

This fiber-rich dish is packed with nutrients that can reduce the risk of chronic illnesses like cancer and heart disease. Enjoy the perfect balance of crunchy veggies and soft noodles with the delicious Japche sauce.

  • Large Saute Pan
  • 2 oz Kale (Chopped)
  • 2 oz Brussels Sprouts (Chopped)
  • 2 oz Broccoli (Shredded)
  • 2 oz Green Cabbage (Shredded)
  • 2 oz Red Cabbage (Shredded)
  • 1 oz Green Onion (Sliced)
  • 2 oz Toasted Almonds (Sliced)
  • 3 oz Korean Potato Starch Noodles
  • 4 Cloves Garlic (Minced)
  • 1/4 Tsp Chili Flakes
  • 1 Tbs Extra Virgin Olive Oil

Dressing

  • 5 Tbs Soy Sauce
  • 3 Tbs Sugar
  • 2 Tbs Sesame Seed Oil
  • 2 Tsp Minced Garlic
  • Black Pepper To Taste

Preparing Glass Noodles

  1. Bring about 5 cups of water to a boil, and cook the noodles until completely translucent and soft (6 to 8 minutes). Drain in a strainer and rinse under cold running water. Drain well. Roughly cut the noodles with a pair of kitchen shears or a knife into 6 -7 inch lengths. Transfer to a large mixing bowl. Mix well with 3 tablespoons of the prepared sauce.

Dressing

  1. Combine all the sauce ingredients in a small bowl and mix well until the sugar is dissolved

Preparing The Greens

  1. Add olive oil to a large skillet over medium heat.
  2. Crush the garlic and add to pan
  3. Sauté the garlic on medium for a few minutes until just golden. Break the garlic apart more with a wooden spoon.
  4. Remove the garlic and reserve for later.
  5. Increase the heat to medium high, add the greens and stir. Then stop stirring! You want the greens to make contact with the pan so they can develop color.
  6. Add the salt, pepper and red pepper flakes, if using. Cook the greens without stirring for 5-8 minutes or until the bottom is somewhat browned, almost charred in places.
  7. Add the dressing and cook for about 5 minutes for the flavors to combine and the greens to soften a bit. If you prefer the greens softer, cook for longer on a lower heat. Toss in glass noodles
